Tea Education
Wu Yi Oolong is in the classic shape of a long curled leaf that resembles a Black Dragon (Oolong). Oolongs vary in their range of oxidation and can result in a green (light oxidation) to a dark brown (longer oxidation). Wu Yi is a highly oxidized Oolong and more smokey and less floral than lighter green oolongs. They often have the characteristic stout style of leaf. Tastes associated with this style of Oolong are woody and thick with roasted notes. We recommend multiple short infusions for Wu Yi preceded by a technique called "washing" to remove some of its woody qualities. The distinct early flavor and smokiness makes this an Oolong to be enjoyed with meals and in the evenings. Second and third infusions are extremely pleasant.
